Monkey Cake

MMmmMmMmmm.... I love Monkey Cake. So for this week's Tasty Tuesday, I'm sharing the recipe with you. It's yummy and it's easy. My kinda cooking.

This is a family recipe... passed down from my Grandmother. Not sure how long it's been in the family. I just know that when I was growing up, it was always a fantastic and rare treat to get some of her Monkey Cake.

Ingredients:

1 cup butter
1 cup dark brown sugar (packed)
2/3 cup granular sugar
3 teaspoons cinnamon
2 packages of buttermilk biscuits (16 oz. size)













Directions:

1. Separate the biscuits and cut into eighths.
















2. Roll each piece into a ball.














3. Combine the cinnamon & sugar. Roll each ball in the cinnamon mixture until well coated.

4. Combine in pan, 1 cup butter and 1 cup dark brown sugar, and cook until thick and bubbly. If the syrup doesn't seem to be getting thick, keep at it a little longer. Then let it sit for a few minutes and it will thicken up.















5. Put half the balls into a cake pan and pour half the syrup over it. Then add the remaining balls and syrup.

6. Bate at 350 degrees for 35 minutes. Remove and cool in pan for 10 minutes.
















7. Put a plate upside down over the cake pan and then flip the entire thing upside down. This will allow your Monkey Cake to flip out onto the plate.
















8. Enjoy! Then be sure to stop by and let me have a sample.

Do it yourself seasoning packets

For this week's Tasty Tuesday, I wanted to share two great recipes for making your own seasoning packets. By making your own seasonings you can easily cut costs and cut waste as well.

You can find a recipe for Taco Seasoning Packets at Reduce Footprints.

And you can find a recipe for Ranch Dressing Packets at Stop and Smell the Chocolates.

I just recently found these two recipes and actually haven't even had a chance to try them out for myself. There are several spices that I need to buy in order to make them... so I'll look for them on sale. Oh and I need to use up my stock of the actual packet seasonings first.

But I'll be making them soon enough because we use both of those seasonings at least weekly. We LOVE tacos... made with ground turkey instead of beef though. And the ranch packets we use in the Ritzy Ranch Chicken recipe that I posted last week.

Anyway, I think these seasoning recipes will work out great for us. I'd like to make them in bulk to cut out the time involved when cooking.

Paper or plastic? Neither.

I've been using reusable shopping bags for quite some time now. Awhile ago it was difficult to even find them anywhere. Now though.... they are EVERYWHERE. Everywhere you go, every store sells their own brand of reusable bags.

This is great and I hope that the trend is really catching on. Easy enough to invest in a few reusable bags, keep them in your car or even a compact one in your purse, and they are always handy when you'll be out shopping.

Until now, all of my reusable bags have been made of canvas. Then about a month ago I spotted this great bag in Target. It is made of recycled plastic Target bags. You'd think it would be kind of flimsy, but nope, it's nice and sturdy and I really like the size... bigger than most of my bags, and longer in length so it can fit different sized items.

Isn't it cute??? Lol. I love it.

Oh, and here's another bag that I got recently... this one is canvas, but also larger than the others that I have already. This was a freebie from collecting Stouffer's Dinner Club points and donating some to help feed the hungry. (Never pass up free rewards programs! These days we're all looking for ways to save money.... shopping the sales, using coupons, completing rebates, using store rewards programs, etc. These are all great and can save you tons of money.

Anyway, something you may or may not have thought of is to not just look for ways to save money, but also ways to make money. Here's a list of the things I do in order to bring in some extra cash. These things won't make you rich, but they can be a nice bonus to your income!

1. Use Swagbucks as your search engine and earn free gift cards.

2. Complete surveys online and get paid. Look to my sidebar for a list of reliable survey companies.

3. Get paid to complete free offers from CashCrate. SO easy.

4. Sign up for Inbox Dollars and Send Earnings. You'll get paid in cash to read your emails. Also receive a $5.00 sign-up bonus for each site.

5. Sign up for MyPoints and get paid in gift cards for reading your email.

6. When you shop online, make your purchases through Ebates and earn cash back. Also get a $5.00 sign-up bonus.

7. Play free (and addicting) games on Winster. Earn points for gift cards, etc.

8. Join Wellness360's free health site. They pay you to use it.

9. Use the iRazoo and MySearchBonus search engines. Though not nearly as good as Swagbucks, you can still win & earn free gift cards.

Super Tasty Ranch Chicken Recipe

Got a great recipe to share today! It's Ritzy Ranch Chicken. With pictures! Pictures to wet the appetite and to help the cooking non-pros, like me.

I'm always on the lookout for new yummy (and easy) recipes to try out. When you have new recipes, and especially when you find some great ones, then you're more likely to eat food from home. And therefore spending less on take out or going out to dinner so often. At least that's how it is for us anyway.

Hubby and I found a recipe awhile back and we have been adapting it every so often until we came up with this. And we LOVE it. And by love, I mean we make it weekly and it gets DEVOURED. Hopefully you'll like this as much as we do!

Ritzy Ranch Chicken

Ingredients:

15 Ritz crackers
1/2 cup grated parmesan cheese
1 envelope (1 oz.) ranch salad dressing mix
2 egg whites, beaten
1.5 lbs. boneless, skinless chicken breasts


Directions:

1. Preheat oven to 350 degrees.

2. Crush crackers in a medium bowl.

2. Combine parmesan and ranch dressing mix with crushed crackers. Mix together.

3. Place beaten egg whites in a small bowl.

4. Spray a large baking sheet with nonstick cooking spray.

5. Cut chicken breasts into smaller nugget sized pieces.

6. Dip the chicken pieces into the egg whites, then into the cracker mix. Ensure they are well coated.

7. Place the coated chicken pieces on the pan.

After all pieces are coated, I usually use some of the excess cracker mix to sprinkle some on the chicken if needed.

8. Place in the oven and bake for 20-25 minutes.

9. Enjoy!

$5/1 Huggies Coupons!!!

While I was scoping out some printable coupons around the net yesterday, I found a super sweet surprise! They currently have two awesome Huggies coupons available.

One coupon is for $5.00 off any one Huggies Gentle Care pack of diapers and the other is for $3.00 any one Huggies Natural Fit pack of diapers.

Any size packs!!! How great is that? It's extremely rare to find coupons like these.
